3 Spring Recipes That Are Great For Patients With GERD
Spring is just around the corner—seriously, can’t you smell those flowers? What better way to ring in spring than with a spring-inspired menu designed specifically to help you curb symptoms of your gastroesophageal reflux disease or GERD. Symptoms of GERD, including heartburn, belching, and regurgitation can oftentimes be reduced with proper diet and exercise. Below, we share three delicious and fresh reflux recipes to help you get your GERD in check just in time for summer.
Shaved Brussels Sprouts Salad with Citrus Vinaigrette
There’s nothing that screams spring like a delicious and fresh salad. The best part of this salad is how filling it is compared to other salads.
Ingredients
24 oz. Brussels sprouts (can buy pre-shaved packages or slice them thinly yourself)
2/3 cup sliced almonds
2/3 cup dried cherries or cranberries
4 oz. goat cheese
1 cup citrus vinaigrette (recipe below)
For the dressing:
1 medium naval orange (juice)
1 tsp. orange zest
1 lemon (juice)
¾ cup olive oil
2 tbsp minced shallots
Grilled Citrus Chicken with Vegetable Skewers
When you picture the warmer months ahead, it’s likely that you picture snow melting, flowers blooming, and, of course, BBQs. It’s time to fire up the grill that’s been hibernating in your garage all winter and cook up a delicious meal that’s both tasty and healthy.
Ingredients
1 ½ lbs chicken cut into cubes
2 zucchini cut into thick slices
1 bell pepper cut into thick pieces
1 red onion cut into thick slices
1 package mushrooms
For the marinade
1 cup olive oil
½ cup balsamic oil
2 tbsp Dijon mustard
1 clove minced garlic
1 tbsp chopped Italian parsley (for garnish)
Mix marinade. Cut all meat and vegetables and set aside. Place the meat into a plastic bag, pour in half the marinade, and seal. Do the same with the vegetables. Leave both bags to marinade in the refrigerator for 3-6 hours. Add both meat and Turn on your grill and place meat and vegetables on metal or wooden skewers and place on grill. Cook until meat is cooked through and vegetables are crispy.
Fruit Parfait
Parfaits are an easy and healthy dessert option and all the ingredients are GERD friendly. However, not all parfaits are created equal. Many are loaded with sugar and fillers. This parfait is a great alternative that allows you to sweeten it as you’d like by adding honey to the yogurt.
Ingredients:
1 package fresh strawberries
1 package blueberries
1 package raspberries
2 cups plain Greek yogurt
1 tsp vanilla extract
1-2 tbsp honey
sliced almonds
Slice your strawberries. Add the honey to your Greek yogurt until you’ve achieved your desired amount of sweetness. Place a layer of fruit at the bottom of your clear container, then add a layer of yogurt, then repeat layers. Voila!
